
Production and Process
We use the roe of fish bred in Hungary to produce our caviar. It is important that the fish originating in Russia are raised in a closed (recirculation) system where the temperature, composition and quality of the water is guaranteed, providing the best possible conditions for the fish. Also important are the background scientific work and the make-up of the feed based on several years experience. This has an essential role in raising the fish and in the quality of the roe they produce. The roe is then cleaned with the utmost care and during the processing special attention is paid to all specifications concerning hygiene. Our own formula is strictly adhered to, including the temperature of the roe and its environment.
After extracting the roe of the sturgeon raised in this manner, the fish itself is also processed. Using our own formula in several stages, it is salted by hand and smoked using specially prepared wood shavings with the most suitable components to flavour the fish. During this technological process, several kinds of salt are used, always in the most suitable combination. Our products are cold or hot smoked in controlled temperatures, so that both their flavour and structure change. In the next few years we will raise three kinds of sturgeon in this way: besides the Siberian sturgeon there will also be osetra and sterlet. These fish are already in their covered breeding pools, but it takes years for them to reach maturity and produce eggs. The roe of the various fish and the fish itself will be prepared with various salting processes and different kinds of salt. Thus we can create products with a variety of flavours.
